When I was pregnant with our daughter Birdy, my sense of smell turned into a superpower I did not ask for — and not in a good way. Every food scent, from the subtlest hint of garlic to the mere idea of something fried, made my stomach turn. It was a rough phase, to say the least.

But then, in a moment of desperation (and hope), we went to an IHOP. I scanned the menu, praying something would seem remotely edible, and there they were: the blintzes. Soft crêpes filled with lightly sweetened cottage cheese, topped with glossy fruit compote. I ordered them with cautious optimism… and reader, they saved me. Not only could I eat them, but I enjoyed them — truly enjoyed them — as if a chorus of animated bluebirds had gathered around to serenade me. I practically floated out of that booth.

Ever since, I’ve had a deep and abiding love for blintzes. They’re comforting and just sweet enough, with that creamy filling and bright fruit topping — equal parts indulgent and gentle. Whether you’re pregnant or just in need of a cozy breakfast that feels like a hug, blintzes are the unsung heroes of the brunch world.
